Redbreast Release the Second Dream Cask Edition and it Sounds DELICIOUS!

On World Whisky Day on (18th May) Redbreast announced an impending release of the second edition to their ‘Dream Cask’ range which will be available exclusively to the Distilleries Birdhouse Club from 27th May. If you are not yet a member it is quick and easy to join –

The Dream Cask Pedro Ximénez Edition has been matured for up to 33 years, and as the label shows, the youngest whiskey in the mix being 20 years old. It is a magical blend of two whiskeys exclusively matured in second-fill ex-Bourbon barrels, and another two that have been finished in one oloroso cask and one Pedro Ximénez cask.

The four casks were then combined masterfully in a ‘specially selected’ Pedro Ximénez butt.

‘The coming together of three exceptional casks, originally destined for Redbreast 21, with a rare Pedro Ximénez butt is a first for Midleton.” States Billy Leighton, Master Blender at Redbreast.

‘The careful balance of sweet, spice and sherry flavours offers a new and complex take on the classic Redbreast Christmas cake flavour profile.’

This edition is the second in the Dream Cask range with the first being a 32 year old which famously sold out last year in less than 6 hours. So if you want this one you better be quick.

‘Rather than try to seek out another extraordinary cask from the Midleton inventory like the inaugural Redbreast Dream Cask, we set out to create a new Redbreast Irish whiskey like you have never tasted before.’ Explains Leighton.
